super easy chicken korma. (crockpot)

oh my, how easy can it get??

(all in the crockpot on LOW)
1 lb of chicken breasts
1 jar of TJ's korma sauce (use some water to rinse it out and add that)
1 cup diced yukon gold potatoes
1 cup diced carrots
1 cup diced onion
(add whatever you want here)

cook up some basmati rice.

cook up some peas.

voila!

we used chicken better than boullion, whole wheat tortellini, fire roasted diced tomatoes, pesto in place of the basil, topped it with parm/romano...oh my WORD.
we were ooohing and ahhhing all through dinner.
paired it with some whole grain crusty rolls.
delish!

the butcher's market rawks!

okay, i know that this blog has been lately about autism. i'm working on tagging things and such, but i'm super lazy. there. i said it. i've always been pretty lazy about things. ask my mom.

but tonite i'm just busting at the seams to tell you about my new job. it has nothing to do with autism...or eating organic food...or having babies. (on a side note...i *did* take a PG test today...you know, one of the new ones that actually spells it out for you?? it said "not pregnant" timmy and i high-fived. and then the realization that the belly fat i have gained sheerly equals the amount of holiday food i ate sunk in. oy! change the subject FAST!!)

okay, okay!! on to my new job.

well, my goal is to be on food network. to change the world with my culinary skills while not attending a single cooking class. (i'm seriously ADD)

so, today i got to work my first 8 hour day in a real specialty food shop. amen and amen. i was like...um...the guy in ratatouille that mopped the floors until someone noticed him??? yeah. that guy/gal. i swear those men think that only MEN know how to cook. i caught myself listening in on recipes and trying to put a word in. nope...nah. do they not KNOW that they have a food network star in their midst??? oh my.

and then i pestered the heck out of PJ...the main butcher. i'm not sure that he knew what he was in for when the boss man hired me. i asked question after question. "why do you cut this meat like this?" and "what's the difference between this cut and this one?" at first i thought he hated me. then he realized that i really am a spaz and he warmed up. pretty sure he's a spaz too. time will tell.

i tasted everything in the deli counter. EVERYTHING. my boss has no clue of my blog for good reason. not sure if i was allowed to do that, but honestly...how can i sell it if i don't know what it tastes like??? i dunno.

the rundown: everything is amazing. ah-may-zing. i would eat the egg salad on any given day. the pulled pork sammies are to die for. the cucumber and tomato salad will make you slap your mama. seriously.

come see me. i'm there 3-7pm and all day sat. you will wish that you had my reciept when i'm all famous and junk. ;)

The Gold Lampstand and the Two Olive Trees

1Then the angel who talked with me returned and wakened me, as a man is wakened from his sleep. 2He asked me, “What do you see?”

I answered, “I see a solid gold lampstand with a bowl at the top and seven lights on it, with seven channels to the lights.3Also there are two olive trees by it, one on the right of the bowl and the other on its left.”

4I asked the angel who talked with me, “What are these, my lord?”

5He answered, “Do you not know what these are?”

“No, my lord,” I replied.

6So he said to me, “This is the word of the LORD to Zerubbabel: ‘Not by might nor by power, but by my Spirit,’ says theLORD Almighty.

7“Whata are you, O mighty mountain? Before Zerubbabel you will become level ground. Then he will bring out the capstone to shouts of ‘God bless it! God bless it!’”

8Then the word of the LORD came to me: 9“The hands of Zerubbabel have laid the foundation of this temple; his hands will also complete it. Then you will know that the LORD Almighty has sent me to you.

IEP's make me all teary-eyed.

i will admit it.
they do.

my dream is to semi-homeschool these babies.
but for now...liam is in public pre-k. an inclusive class. and i adore the teachers. it's the best thing for us right now. i have a job and two little girlies to look after.

but oh my word, the IEP's.

they leave me reeling sometimes.

it's hard enough entrusting your own child to someone that you haven't known for more than 30 mins, but hearing that your child won't eat at school and hearing that i should send better food to school for his lunch? ouch. not that i'm blaming...i'm very new to this.

this is a kid who will eat a total of like 7 things. i am his mama. i KNOW what he will or will not eat. i send like 20 things in his lunchbox because i know this.
